Beach, Otakon and Baked Spaghetti

Yes, friends..
it was another gorgeous day out on the water.

It is summertime and we are fully embracing it!

A few weeks ago, we found a new beach.
The view is great and bottom is clean and sandy
and the best part..
it is snake free!

In case you are wondering..
 the new camera was safely at home,
these pictures were taken with the handy dandy phone camera.

Darla came out with us again.

Whenever we pack our beach bags she gets excited.
She loves the beach too.

Sally came along and loved the new beach too.

Lately she hasn't been going out on the boat with us.
It's boring!!!
You know how those finicky teenagers are! 

The day would have perfect if  Michelle could have come
but after a long weekend off, she had to work.

Of course, after a day filled with swimming,
  we were all exhausted and hungry.

Darla was pooped!!!
She curled up inside of an inner tube and took a nap before we had started packing up.


This weekend was a big weekend for my girls.

Thier yearly clock revolves around this weekend convention.

What is Otakon?

Otakon is a fan convention in the United States focusing on East Asian popular culture (primarily anime, manga, music, and cinema) and its fandom.

Those who attend the convention usually dress up like their favorite characters.

Years ago,  When Michelle was in middle school, 
 I took her to her first few Otakon conventions.
Grandmom made her many awesome costumes and she would have a blast.

As she got older, 
 Michelle made her own elaborate costumes and went to the convention with her friends.

Michelle no longer dresses up but finds her Otakon pleasure in taking her little sister.

This year, Sally didn't want a fancy costume either,
she made the little felt (bunny?) hat and put together a pink sword and she was ready to go.

This is the character that she modeled herself after.

The Otakon clock ticks once more..
Only 361 days to go!


I made another recipe from Trisha Yearwood's cookbook..
I reallly love this cookbook!!!

Baked Spaghetti

I had to snag a photo from the Internet since we ate ours before i could take any pictures.



6 slices bacon

1 teaspoon minced garlic

1 cup chopped onion

1 cup chopped bell pepper

3 14.5-ounce cans diced tomatoes with liquid

1 2.25-ounce can sliced ripe black olives, drained

1–2 tablespoons dried oregano, according to taste

2 pounds ground beef, browned and drained

12 ounces thin spaghetti, cooked and drained

2 cups shredded cheddar and mozzarella cheese

1 10-ounce can cream of mushroom soup

¼ cup water

¼ cup grated Parmesan cheese



Preheat the oven to 350°F. Grease a 9 × 13 × 2-inch baking dish. In a large skillet, cook the bacon until slightly crisp, then cut it into smaller pieces. Remove the bacon and saute the garlic, onion, and bell pepper in the bacon drippings until tender. Add the tomatoes, olives, oregano, bacon, and the cooked beef. Simmer this mixture, uncovered, for 10 minutes. Place half of the spaghetti in the prepared pan. Top the spaghetti with half of the vegetable-beef mixture. Sprinkle this layer with 1 cup of cheese blend. Repeat the layers. Mix the canned soup and water until smooth, and pour over the casserole. Sprinkle the top with Parmesan cheese. Bake, uncovered, for 30 to 35 minutes, or until heated through.

     Everyone loved the baked spaghetti!!
   It is now a family favorite in our house!

I don't have the cookbook, but I have been watching Trisha Yearwood's cooking show on Foodtv. Her recipes do look so delicious! She is kind of a combo of Pioneer Woman and Paula Deen!

Looks like your girls have had fun over the years. I bet that cookbook is full of yummy recipes. I made one of her recipes from a Country Living magazine. Bars with chocolate and crackers. They were so easy, and SOOO very good! The family loved them!
