Bacon Wrapped chicken

Taken from the Phyliss Hoffman Celebrate Halloween issue, I have made this recipe a few times this month ~ it's is incredible!! Easy and delicious, try it.

Bacon Wrapped Chicken

1 teaspoon ground coriander
1 teaspoon paprika (smoked)
6 boneless chicken breasts 12 slices of bacon
1 tablespoon of olive oil
salt and pepper

In a small bowl, season breast with spices. wrap each chicken breast with 2 slices of bacon, securing with a toothpick. Preheat oven to 425, Line a baking sheet with aluminum foil. Place a cooling rack over prepared backing sheet.

Heat oil in skillet over medium heat. Cook wrapped chicken breast for 3 to 4 mins per side. Remove from pain and place on cooling rack. Bake for 40 minutes or until a meat thermometer reads 170.
Serves 6
