Apple ( PUMPKIN) - Cinnamon Bars

This recipe is from the September 2008 Pillsbury Fall Baking mini magazine.

Apple - Cinnamon Bars
( I didn't have the apple butter that was called for so I substituted with Pumpkin butter ( delicious)


1/2 cup ( 1 stick) butter
1/2 cup brown sugar
1/2 cup sugar
2 large eggs
1/2 cup apple or (pumpkin) butter* ~ ( I used Pumpkin)
1 3/4 cups All-Purpose Flour
1/2 teaspoon baking soda
1 cup cinnamon chips ( I didn't have any so I used a crumbed ~ butter, ground cinnamon and coarse sugar mixture)
1 cup finely chopped apple
1/2 teaspoon salt
1 teaspoon vanilla

1 cup powdered sugar
2 tablespoons milk

preheat oven 350' .. spray a 13X9 in pan with cooking spray.

Beat together the butter and sugar until soft. Add the eggs, apple butter and vanilla and beat until well blended. In a separate bowl, whisk together the flour, baking soda, salt . Stir these dry ingredients into the butter mixture. Add Cinnamon chips.
Spread batter into pan .. bake 28 -32 min's or until edges begin to pull away from sides of pan and top is evenly browned. Cool for an hour.

In small bowl, mix glaze ingredients until thin.. drizzle glaze over bars.

** 32 small bars**

150 cals per bar


And Ali.. I didn't complete do nothing while I was on the phone for 3 hours this morning. The shirts for the Halloween party have officially been pre-dyed. ~ and so are my hands!!!
